Veggie Sandwich

Who doesn’t love a good veggie sammy?  This is one of my go-to faves when I’m in the mood for something fresh and filling! Creamy hemp seed cheese makes this sandwich absolutely awesome!

2 slices seeded whole grain bread or dark rye (yum)

2T hemp seed cheese


Arugula or spinach

2 slices tomato

Thinly sliced bell pepper

Thinly sliced red onion

Shaved carrot slices

Avocado slices

Slice of good cheddar (or not if vegan)

To make:

Slather 1T hemp seed cheese on each piece of bread.  On one piece begin layering ingredients as listed, top with 2nd piece of bread.  Now, eat it!
