Breakfast Tacos

This is my take on my favorite breakfast meal from Sunrise Cafe in my hometown of Yellow Springs, Ohio. Everything is made from scratch and cooked to order and SO good!  Local and organic produce, homemade bread, its one of the few things I miss about Ohio!  Whenever me and Mr. Make peace love food dined here, I would always order 2 or 3 breakfast meals under the premise of sharing but, when the food came out I would hoard it all on my side of the table, hubs HAD to share his with me though.  Selfish, yeah-but, good food brings out the worst in me! The pancakes are killer and the biscuits and gravy are something my husband would die for, just in case you want to plan a visit!  Cool wait staff and the owner/chef is pretty cool too!

1 Can black beans

1 Cup shredded pepper jack cheese

corn tortillas

1 Avocado, sliced

1T olive oil

1t oregano

Plain greek yogurt or sour cream

Salsa

1t minced garlic

3 scallions, chopped

Combine beans, olive oil, oregano and garlic in a pan, cook over med heat for 5 mins.

In a skillet, warm both sides of a tortilla-about 1 min on each side, then add cheese.

Add desired amount of bean mixture to tortilla, add avocado, salsa, a dollop of greek yogurt and scallions.

You can make this more breakfast-y by adding a scrambled egg (I hate eggs, so I don’t)!

I sometimes have these for breakfast AND lunch, adding some grilled chicken to make them lunch-ier!
